After 34 years of experience in the restaurant industry, Brandon Gunderson took his years of learning, his love for pasta, and an idea that came to him “in the days of COVID” and opened Pasta Buckets in September 2024. “I have three teenagers, I get how busy things can get. Pasta Buckets offers delicious, prepared-fresh, fast dinner options for pick up, dine in, or delivery.”
“At Pasta Buckets, every meal celebrates family, tradition, and a love for great Italian food. This journey really began with the comforting aroma of my Dad’s homemade spaghetti sauce, a staple in our house when I was growing up, that always promised a great meal. Growing up in a family of four kids, the anticipation of spaghetti nights was magical, a tradition that inspired my lifelong passion for pasta,” shared Brandon. “I have a profound appreciation for homemade, comfort food – I want to continue to share that with the community.”
“Pasta Buckets was born out of necessity and innovation during the COVID-19 pandemic. When sit-down restaurants in Minnesota closed, I envisioned a way to bring hearty, delicious pasta meals to families in the comfort of their homes. Inspired by picking up a bucket of pasta, meatballs, and garlic breadsticks, Pasta Buckets was created for simple, fast, and delectable dining. Think KFC, but for tasty, fresh pasta.”
“Our basic pasta meals come in three sizes to accommodate different family sizes, and there are 360 combinations for customers to try! We offer large portion options and a la carte selections. There’s a variety of pasta, protein, and sauce items you can choose from, along with bread, salad, and dessert to round out the meal. We also serve a classic Meatball Sub – it’s the best in town!”
Brandon has always lived in the Central MN area and moved to St. Cloud 25 years ago, where he lives with his wife, Amy, along with their three teenagers. “Our mission is to provide highly affordable, convenient, and consistently enjoyable meals that cater to the busy lives of families and individuals. As a father of three teenagers, I understand the hustle and bustle of daily life with sports and activities. Our goal is to offer tasty and generous meals for leftovers, ensuring you get the most out of every order,” explained Brandon.
“We’re getting pretty well-known for our desserts - and the chocolate chip cookie is actually my daughter’s recipe. They’re homemade and so yummy. I’m fortunate to have my family very involved, and working with my kids is very special to me. Knowing they’re all in high school, it’s bittersweet knowing that soon they’ll find their own career paths.”
“Being part of the Greater St. Cloud community is absolutely amazing,” Brandon said. “I have formed so many friendships both professionally and personally. I love the fact that other businesses are willing to help spread the word. I feel like St. Cloud is a big town with a small-town feel. It's hard to go somewhere where you don't know anyone. Supporting small businesses is something I feel strongly about, and with the continued support, I know we can be here for a long time.”
Pasta Buckets is located in Waite Park, near Crossroads Mall, in the old Famous Dave’s space. “Because our restaurant is tucked in a corner, it has been a challenge getting our location out, and that we’re here and welcoming business. We’re actively marketing and have completed a remodel of our indoor dining. Previously, we were pick-up or delivery only, but now you can enjoy your meal at Pasta Buckets - and we’d love to host you,” shared Brandon.
